Description

山椒是一種兼具柑橘清香及嗆辣口感的香料。山椒的用途十分廣泛,且隨著生長階段及部位不同,可變化不同滋味。在山椒樹尚有樹葉的春季至秋季可採收山椒嫩芽。山椒花搭配烤魚最對味。花謝後結成青檸色山椒幼果,可用於醬油滷燉之料理,或用於醃漬、燉煮小沙丁魚乾。熟透變紅的山椒果則曬乾後,研磨製成山椒粉。在日本,山椒常搭配鰻魚(unagi)一同食用,去除腥味。也適用於燒烤肉類、炸雞、炸肉、火鍋、味噌湯等多種料理!
