歐棒手工奶油,是巴黎拉法葉百貨超市、巴黎La Grande Epicerie超市以及起司專門店才買得到的高級奶油

Au bon beurre法文原意為最棒的奶油,歐棒手工奶油產自法國北部靠近德國邊界的Pas-de-Calais(加來海峽省區),獨特的香氣源自於祖先流傳下來的古法配方,並且堅持純手工製作。

歐棒手工奶油要大約20公升的全脂牛奶才能製出1公斤,牛奶經輕微發酵熟成後轉變為鮮奶油,接著不停的攪打這些鮮奶油,如此打出的奶油表面會出現懸浮的油脂,之後把奶油從脫脂乳中分離,再將分離出的奶油放入清水中搓揉,盡可能的將奶油中的脫脂乳洗掉。最後再添加松露碎、海鹽等增加風味並塑形,如此繁複的手續,才成就舌尖上那一瞬間的美味

 

品嚐技巧

1.    將松露奶油回溫後,松露香氣才會綻放開來,抹在麵包上享用香氣更明顯

2.    可簡單燙個義大利麵,將松露奶油拌進麵中即可享用松露風味的義大利麵

3.    可使用松露奶油醬製作法式炒蛋、歐姆雷蛋,即可變化出松露風味的蛋料理
