Beaufort is a hard cheese produced in the alpine valleys of Savoie (Tarentaise, Maurienne and Beaufortain). This cooked and pressed cheese is made with full-cream raw cow’s milk. Its texture is firm on the attack in the mouth, then melting and reveals its numerous and subtle aromas. It is the alliance of 3 characteristics that gives it this unique flavor: The territory, the dairy cows with mountain qualities and the ancestral know-how of the cheese makers. Summer Beaufort is made when the cows are in the pasture, including in the pasture from June 1 to October 31. This rich and diversified diet for summer cows gives summer Beaufort a yellower texture and a more fruity taste.
Beaufort has been recognized as PDO (Protected Designation of Origin) since 1968. PDOcodifies the rules in specifications, from the production of the grass to the cheese leaving the maturing cellars. A control plan guarantees the application of these rules, the main ones of which are:
-Geographic area: high mountain part of the Savoie department in the Beaufortain/ Val d'Arly, Tarentaise and Maurienne valleys. This area is characterized by large mountain pastures.
-Grazed grass and hay (no silage)
- 2 breeds of cows: Tarentaise (or Tarine) and Abondance
-Limitation of production to 5000 kg of milk per cow and per year
- Some specificities: preparation of sourdoughs, the wooden circle ...
- The casein plate which guarantees traceability
-Minimum ripening of 5 months
