部位: 菲力牛排/牛腰內肉
位於牛隻腰部的肉,在牛腰肉的末端,由於這個部位的肌肉不是負重的肌肉,結締組織比較少而較軟嫩,被認為是牛肉最軟嫩的部位,而且每頭牛只能切出4至6磅,因此售價最為昂貴。此部位較無油脂,是以品嚐牛肉本身的鮮甜味道與軟嫩口感為主,適合烹飪3-5分熟

料理方式:

菲力牛排最適合的熟度為3-5分,建議調味鹽和胡椒後,每一面大火煎2分鐘,與新鮮香草一起煎風味更佳,放入烤箱烤可熟透更均勻,使用烤箱爐溫200度整條菲力需烤15-20分鐘,若切成5cm厚度則需要烤3-5分鐘即可
