果膠粉只需跟砂糖混合均勻,在水果泥加熱到40-50度之間時,倒入1/5的量並不停攪拌均勻,持續加熱當中慢慢並分批倒入剩餘4/5的果膠砂糖粉,持續不停攪拌均勻,加熱直至滾沸約102度,軟糖呈現緊縮Q彈即可

NH果膠的特性是把水份留住適合使用在製作果醬,柑橘果膠是把水分煮走適合製作法式軟糖,亦可使用在含水份高的果醬中幫助使濃稠,換言之,在專業甜點廚房中,製作法式軟糖一定需要柑橘果膠來幫助果泥成型,使用NH果膠製作的軟糖容易有反潮情形
