活水放養的櫻桃鴨腿,肉質彈嫩緊實,油脂鮮甜而不膩

什麼是櫻桃鴨?

櫻桃鴨由英國櫻桃谷品種與北京鴨配種而來,脂肪肥美鮮嫩是其特色。櫻桃鴨來自好山好水的花蓮玉里,以秀姑巒溪水活水飼養,鴨隻健康活潑,是外銷日本的優良品種

料理方式:

1.   適合做烤、油封、炒、炸料理。

2.   法國名菜油封鴨腿,可一次做多支保存起來,將鴨腿肉稍微用刀割開後,使用粗鹽、百里香、迷迭香、杜松子、胡椒醃製至少一晚,油封前將醃漬好的鴨腿用水清洗掉鹽分,將烤箱爐火調至130度,用鴨油蓋過鴨腿,在烤箱中油封約2-2.5小時,上菜前將表皮朝上靠近烤爐上火將鴨皮烤脆即可,或是使用平底鍋將鴨皮煎脆,也可以將每隻鴨腿包裹鴨油後冷凍保存
