特色:
phyllo,又叫做filo、fillo的薄脆酥皮,源自於中東及地中海地區,特色是像比春捲皮還薄,像是紙張一樣的千層酥皮,廣泛運用在地中海、中東及法式料理與各式甜點中,是做精緻料理的必備食材

派皮也是一般俗稱的酥皮,Fillo(或稱Phyllo)在希臘語是「葉子」的意思,層層交疊的派皮烤好之後像落葉一樣金黃酥脆,廣泛的運用在希臘或地中海料理中,如BAKLAVA巴克拉瓦千層派、SPANAKOPITA波菜乳酪派以及美味的APPLE PHYLLO STRUDEL蘋果酥皮派,無論是前菜、主餐到甜點都用得到。

希臘菲洛薄派皮以非漂白麵粉、蔬菜油、鹽製作,不含反式脂肪、飽和脂肪及膽固醇且熱量較低,口感與香氣與傳統酥皮一樣的好,是取代傳統派皮的健康選擇。

派皮的保存與使用:
放置於冷凍狀態下,派皮可保存四個月以上,冷藏狀態下約一個月左右。若在冷凍狀態下要使用時,需先移至冷藏解凍24小時。
在冷藏狀態下使用時,最好能在室溫下放置半小時回溫(但不接觸空氣),這樣派皮會比較有彈性。派皮回溫時最好放在夾鍊袋或塑膠袋中包好,以免乾掉。也可先取出預計要使用的量包好冷藏保存
