什麼是Pancetta 風乾培根?


Pancetta 風乾培根是將新鮮豬腹肉(豬五花)塗抹鹽與數種香料調味醃製,經過長時間的風乾熟成而不經過煙燻程序。


塊狀與捲狀風乾培根有什麼差別?


塊狀培根因質地較乾硬,入料理後口感較硬,但風味更集中濃縮,捲狀的肉質較濕潤柔軟,切丁拌炒時吃起來會比較好咬,可依照喜歡的口感與風味選擇塊狀或是捲狀


特色:

精選豬腹肉至少風乾熟成兩個月,鹹度適中、風味濃郁帶有豐富的美味油脂,被稱為法國的Pancetta,切片油煎是最傳統且美味的吃法或以片狀包裹雞肉、魚肉進行烘烤;也可煎至焦脆後鋪陳在沙拉上,亦可加入蛋料理、製作義大利麵、燉菜....等百搭各式料理。


使用方法:

1. 適合煎炒加強義大利麵、炒飯風味

2. 烤或炒過的培根丁適合搭配濃湯、燉飯、燉煮扁豆

注意:表層風乾後會較為乾硬,較難咀嚼為正常現象
