匈牙利鵝胸獨特之道:

1. 以優質飼料配方並搭配當地盛產玉米為主食,匈牙利氣侯涼爽、四季氣溫變化不大,提供優質養殖環境,鵝隻得以用最自然方式養殖成長,使其肉質更為扎實且鮮嫩多汁,帶有宜人嚼勁,也因為氣候涼爽,其鵝皮較薄

2. 取用胸腹帶皮清肉保留鵝胸肉的美味完整,肉質鮮嫩扎實,多汁甜潤有彈性,無一般鵝肉腥味,鮮嫩的口感猶如鵝肉中的菲力


料理方法:

1.     將鵝胸表皮先劃幾刀,表皮朝下入平底鍋乾煎(不需要油),油脂會隨著加熱溶出,使用本身鵝油將整塊鵝肉煎至金黃酥脆,放入200度的烤箱烤3分鐘3分熟、5分鐘5分熟、7分鐘7分熟,烤好後靜置約3分鐘即可切片享用

2.    煎完鵝胸剩下的鵝油不要浪費,可煎馬鈴薯、拌炒蔬菜都好吃

 

好吃秘訣:

1. 可低溫烹調過後肉質更為軟嫩

2. 使用眾香子(全香粉)醃製過後,風味更有層次
