Kaviari魚子醬選自世界各地的契作魚塭,每一個魚塭皆經過職人的指導,重新引進優質的鱘魚種,在重視自然的前提下,嚴密控制鱘魚的生長空間、純淨的水質以及優質的食物。等待取出鱘魚卵後,隨即進行初步鹽醃,職人們將親自前往漁塭精選出最高品質的魚卵,帶回Kaviari位於巴黎的實驗室熟成。 經過層層工藝的細節,魚子醬大師布魯諾.伊戈斯(Bruno Higos)親自掌握熟成過程,新鮮平淡的魚子醬歷經3個月左右的熟成期,產生複雜且多層次的頂級海洋鮮甜風味,驚豔您的味蕾


什麼是魚子醬:
雖說幾乎所有魚種的魚卵都可製成魚子醬,但僅有純種鱘魚的魚卵才能稱做為魚子醬;尤其在歐洲,魚子醬的精確嚴格度如同定義香檳。因著各種鱘魚成長期的不同,能採收的魚卵數量和品質也不同,相對的也反應在價格上。品質好的魚子醬,圓潤、飽滿、滑溜、色澤清透又明亮,通常都是取12歲以上的鱘魚魚卵製成,搭配酸味較濃的香檳更是絕配!


味道:

滑順的奶油般口感帶有木質調的香氣魚卵尺寸比一般偏大,這是伊朗的漁業工藝帶至義大利後而有的成但就算尺寸較大,也不會影響口感,反而使品質更加穩定入口後有核桃的氣息帶給味蕾上的驚喜。
