什麼是Provolone起司?

Provolone台灣又名:波芙隆起司/波羅伏洛/帕芙隆乳酪,原產於義大利南部,和Mozzarella馬自瑞拉一樣屬於紡絲型起司,外型有臘腸狀、球狀等各種形式,Provolone帕芙隆乳酪的質地較硬,風味濃郁略帶甜味且容易塑型,容易有「牽絲」口感,傳統上是屬於窮人的食物,因為只要一小片,就能帶來濃郁的風味,其中又分為Dolce(淺熟成)Piccante(熟成)兩種,Dolce(淺熟成)適合grill爐烤,Piccante(熟成)適合加在燉飯中


使用方法:

常切成薄片番茄片臘腸夾在三明治、堡、巧巴達一起烙烤成帕尼尼panini,或加在薩增加風味,也可製作焗烤馬鈴起司火無論冷食或加,微波或焗烤後更是有強烈拉絲效果,是在歐洲非常受迎的一起司

1. 建議可將波芙隆起司先微波融化,再塗抹在麵包上然後將麵包烤酥,拉絲效果比較好

2. 可與橄欖油、passata番茄泥一起焗烤,再撒上乾燥奧勒岡香料,烤的金黃焦香滾燙的波芙隆起司,不管是直接吃、沾麵包、玉米片、蔬菜棒都好吃
