什麼是Taleggio塔雷吉歐乳酪?

Taleggio塔雷吉歐史得追朔至十世巴底地Lombardy 可以史最悠久的大利半軟質乳酪之一也是大利地保D.O.P. 的乳酪

Taleggio塔雷吉歐屬於洗浸式乳酪" washed-rind cheese洗浸式乳酪的做法是把乳酪浸泡在水或酒精中或只是把水或酒精刷在起司外皮上巴跟水的比例因起司種類而有所差啤酒富有地特性的酒甚至咖啡都能被拿利用洗浸的用意助外皮形成一層單薄但固的保乳酪蕊能更健全地也避免外皮出不必要的

洗浸的Brevibacterium Lines (簡稱B-lines) 菌在外皮逐形成此菌本身洗浸式乳酪因此得了"臭乳酪"stinkycheese 的臭名,但雖然聞起來氣味較重,但品嚐起來帶有濃郁香醇的香氣與風味是Taleggio雷吉歐特色:

特色: 橘色的表皮上有少許藍黴內部帶有淡淡的奶油色味醇厚柔和酸味

塔雷吉歐口感:

地柔略具口感如奶油般滑郁而細緻有洗浸乳酪特有的味,直接品嚐像是牛奶糖在口中快化掉的前五秒,帶點彈性,不時散發出濃郁奶香,隨著舌尖輕快的律動,把香氣傳送到口腔內的各個角落

使用方式:

1.   Taleggio塔雷吉歐切片放在切片法棍上焗烤,烤後的,品嚐到的是濃醇乳香

2.   塔雷吉歐焗蛋: 準備一個小烤盅塗抹奶油,加入顆蛋再加入Taleggio塔雷吉歐乳酪丁,用180度爐溫烤到起司融化即可享用

3.   塔雷吉歐醬汁: 將牛奶與切丁的塔雷吉歐一起煮開融化即是最美味的醬汁,可運用在義大利麵、燉飯裡,也可簡單的淋在烤蔬菜、肉排上增加風味

4.   切小丁可廣泛夾在在披薩、義大利麵、燉飯中增加風味

5.   可搭配無花果、西洋梨、果醬、蜂蜜等甜味食材製作焗烤三明治更易入口
