澳洲老牛/純草飼和牛獨到之處:

源自澳洲昆士蘭的Roam全草飼完全自然放牧的和牛老母牛 (13歲老牛),完全天然草飼,無任何生長激素、賀爾蒙、藥物添加,長時間飼養讓和牛慢慢成熟,因此帶有獨特的成熟風味,選用MB7+等級,此等級僅佔全澳洲和牛總產出的 20%,數量少且珍貴,吃起來像是牛肉中的土雞,肉味濃郁香醇甜度高、肉質緊實富有咬感,越嚼越香,又被稱為紅寶石老牛。


部位: 板腱牛排

取自於肩胛部的板腱牛排又稱嫩肩里肌,油花少但分佈均勻,肉質軟嫩中富有彈性,香甜多汁,特色是中間含一條較粗的筋,透明的嫩筋是可以輕鬆嚼動的,板筋受熱膠化後,口感香Q、更有層次,板腱算是CP值高的和牛部位,物美價廉,可廣泛運用在料理中,厚切可作牛排、燉煮,切塊成骰子狀適合煎或燒烤,切成薄片適合燒烤


料理方式:

1.    板腱牛排,適合直接煎烤57分熟,嫩度與口感最佳,也適合整塊做燉煮

2.    板腱燒肉片,適合烤肉,兩面烤上色即可享用

3.    板腱骰子肉塊,適合直接煎或燒烤至5-7分熟,一口大小富含肉汁與咬感
