什麼是帕瑪火腿prosciutto di Parma?

義大利約克夏與蘭諾斯配種


獨到之處:

選用義大利境內被授權地區所豢養的豬隻,只可使用義大利當地養殖的豬隻製作火腿,並在幼豬出生時即開始嚴格的管控其健康飼料,選用穀物與製作義大利乳酪之王-帕瑪森乳酪之牛奶與乳清作為主食,也因此讓火腿有鮮嫩香醇且勻稱的脂肪,造就出帕瑪火腿的獨特香氣,在製作過程中只使用粗鹽,與透過溫度、濕度的嚴格監控,加上帕瑪山區的天然氣候催化,熟成至少13個月的帕瑪火腿便初步完成,最後,透過專業檢驗師核可並烙上皇冠帕瑪標章(僅有蓋上帕瑪標章才能稱為帕瑪火腿),即是大家公認美好香醇的義大利帕瑪火腿


火腿塊特色:

腿塊富含膠質,有肉有筋並帶皮,經過燉煮後可提升鮮味Umami並可燉出濃郁湯頭,特別適合燉煮老母雞高湯,家裡的冰箱可隨時備貨一塊火腿塊,作為煲湯和入菜最天然的調味料,可讓料理更鮮美,味道更有深度


使用方法:

1.煲湯時加入一小塊火腿即可吊出食材鮮味

2.將帕瑪火腿川燙後,加入雞骨/肉、蔬菜、香草束以文火燉煮1~2小時,鮮甜美味的高湯就完成了
