什麼是Prosciutto di San Daniele ?

聖丹尼爾火腿為義大利東北部佛里烏利地區勝達涅爾(San Daniele del Friuli)的名產,此區位於阿爾卑斯山與亞得里亞海交界處,得天獨厚的氣候,因此造就Prosciutto di San Daniele 不凡的風味,與帕瑪火腿齊名並列為義大利品質最好的生火腿。


獨到之處:

使用與帕瑪火腿同樣的義大利約克夏與蘭諾斯配種豬,將一整隻腿用海鹽下去醃漬,連後腿末端一起做成火腿,不像帕瑪火腿會截去膝部以下。

風乾熟成至少13個月以上,讓鹽分均勻地滲透至火腿中慢慢熟成,造就柔嫩口感與豐富氣味,最後成品外觀會成為典型的“吉他”形狀。



風味與口感:

切片為均勻的粉紅色帶有漂亮的白色油花,鹽味比較溫和,口感細膩,具獨特甘甜香味,熟成時間越長顏色越深鮮味越濃厚。



使用方式

1. 作為冷盤開胃菜,搭配起司、堅果、哈密瓜、無花果等等

2. 與法棍搭配做成三明治

3. 搭配沙拉、芝麻葉、烤蔬菜
