精選六個月大的小羔羊羊肩排,肉質鮮嫩細緻,無一般羊的腥羶味,軟嫩帶有緊緻Q彈的肉質


部位介紹:

肩部(Shoulder Rack),延胸椎至肋骨(前半部)切割而得的羊肉,這部位活動較少,肉質嫩,筋膜少


烹調方式:

1.    醃製建議前一夜冷藏緩慢退冰後,可醃製新鮮迷迭香、百里香、橄欖油一起醃製,或是使用乾燥香料孜然粉(小茴香粉)、煙燻紅椒粉與橄欖油一起做醃製

2.    烹調建議不要切塊,整塊羊排先用中大火煎四面上色,在使用爐溫200度烤約15-20鐘烤到約5分熟,烤完靜置5-10分鐘,即可享用,或是搭配薄荷醬、chimichurri醬等層次風味更豐富
